Just before I began my baking frenzy for the afternoon I got a phone call from our local Superquinn. I had entered a "Guess the weight of the giant Pumpkin Competition" when I was buying my pumpkin. I filled in the form, put it in the box and I won! I rushed off to the shop with the kids, skipping down the road to collect a huge hamper of fruit and goodies. Those competitions are real, lucky me.
I finally made something that looks like Halloween. My cup cakes looked too angelic so these worked out fine. I got the recipe from the same famous Limerick baker and now all these bad boys are in the tummies of the neighbourhood ghouls and demons.
The icing is from supercook and you buy it in a box of four tubes. Be as artistic as you like, Resevoir Dogs and Tim Burton come to mind.
Set oven to 180degreesC/ Gas 4
For ten big men you need
A gingerbread cutter
50g softened butter
75g light muscovado suger
1 egg beaten
175g plain flour
1/2 tsp bicarbonate of/ bread soda
1 tsp mixed spice – cinnamon, clove, ginger
1 tblsp golden syrup
1. Cream the butter and sugar for a few minutes until fluffy.
2. Sift in the dry ingredients and bind the mixture with the syrup.
3. Turn onto a floured surface and roll out to half and cm thick. Cut with a flour dusted cutter and bake for 5 mins.
4. Enjoy the macabre decorating and the faces on the kids when they get them
